“Creamed” spinach

This is another one of my seriously easy cheat recipes. Simple and healthy, once again I have used one of my favourite “seasonings”, parmesan cheese.

  • 200g frozen spinach
  • 2 tablespoons of low fat natural yoghurt
  • 2 tablespoons greated parmesan
  • Salt and pepper to taste

Cook the spinach according to the instructions, I put mine in my microwave for 3 minutes. Squeeze out a bit of the water so it’s not too wet. Add the rest of the ingredients, stir and pop back into the microwave for 30 seconds. It’s also easily done on the hob in a pan.

If you’re feeling more energetic, you can sauté some onion and garlic separately in some olive oil and add this at the same time as the yoghurt.
