This is another one pot wonder. A really lean, tasty and healthy dish. Enjoy with rice, topped on a baked potato, with crusty bread or just on it’s own as a low carb meal.
Serves 4
Ingredients:
- 500g shredded cabbage
- 750g lean beef mince
- 1 or 2 cans of chopped tomatoes (depending on how juicy you like it)
- 1 tbsp olive oil
- 1 onion, finely chopped
- 1 clove of garlic, crushed
- 2 tbsp tomato purée
- 2 tbsp Worcestershire sauce
- 1 level tsp sugar
- Salt and pepper to taste
- Add the olive oil to a thick bottomed / cast iron pot
- Fry the onion and garlic until softened
- Add the mince and brown
- Add the tomato purée and stir through
- Add the chopped tomatoes and shredded cabbage (you might need top gradually stir in the cabbage so that it’s easy to stir in)
- Add the Worcestershire sauce and sugar
- Using the tomato can, fill half the can with water and add to the pot
- Season to taste and stir
- Cook on a low heat with the lid on for at least 45 minutes to an hour, stirring occasionally. If the water level looks low, top up with a small amount so that nothing catches at the bottom of the pot
- Enjoy with rice, a baked potato or crusty bread or just on it’s own as a low carb, healthy meal.
