Broccoli salad

This is a really tasty, fresh and healthy salad. There are many ingredients but they are all important and add to the overall flavour.

For the salad:

  • 1 head of broccoli cut into small pieces and blanched in boiling water
  • 70g smoked bacon bits or pancetta, fried until most of the fat has rendered down and it is crispy
  • 1/2 a finely sliced red onion or a bunch of spring onion
  • Carrots cut into matchsticks or finely sliced in rounds
  • 70g sliced radish
  • A handful of crushed walnuts, cashews or pistachios – or you could substitute these with sunflower or pumpkin seeds – this is for
  • 1 apple, grated or cut into small pieces (prepare this last and add immediately to the dressing so that it doesn’t discolour)
  • 100g finely chopped mature cheddar or Parmesan cheese
  • Chopped coriander (optional)

For the dressing:

  • 1/4 cup Greek yogurt
  • 1/4 cup of good quality mayo
  • 1 teaspoon wholegrain mustard
  • A generous pinch of salt

Method:

  1. Blanch the broccoli and leave to cool in ice cold water
  2. Prepare the rest of the ingredients, leaving the apple until after you have made the dressing
  3. Mix all of the ingredients for the dressing together
  4. Add the apple to the dressing to avoid it becoming discoloured
  5. Then mix everything together and serve.
