Broccoli and cauliflower soup

This is such a delicious soup and so easy to make, not to mention cheap. Serves between 2 and 4 depending on whether you’re serving as a starter or a main course.

Ingredients:

  • 900g fresh or frozen broccoli and/or cauliflower – I’ve used both in this recipe but you can use one or the other
  • A small chopped onion – I didn’t have a white onion so I used a red one
  • A clove of garlic
  • 2 chicken and/or vegetable stock cubes
  • 750ml water
  • About a teaspoon or two of olive oil
  • A tablespoon of grated Parmesan cheese
  • A dollop of creme fraiche or soft cheese
  • Salt and pepper to taste

Method:

  1. Sauté the chopped onion in a little olive oil until translucent
  2. Add the garlic and cook for a couple more minutes
  3. Add the entire bag of frozen broccoli and cauliflower and cover with just enough water to almost cover the veg (you can always add more later)
  4. Add the chicken and/or veg stock cubes (I used 1 cube of chicken stock and one veg stock cube)
  5. Let it boil gently for about 20 mins until soft
  6. Add the dollop of creme fraiche or soft cheese and the grated parmesan
  7. Blend until smooth
  8. Enjoy on it’s own or with some crusty bread.
