This is such a delicious soup and so easy to make, not to mention cheap. Serves between 2 and 4 depending on whether you’re serving as a starter or a main course.
Ingredients:
- 900g fresh or frozen broccoli and/or cauliflower – I’ve used both in this recipe but you can use one or the other
- A small chopped onion – I didn’t have a white onion so I used a red one
- A clove of garlic
- 2 chicken and/or vegetable stock cubes
- 750ml water
- About a teaspoon or two of olive oil
- A tablespoon of grated Parmesan cheese
- A dollop of creme fraiche or soft cheese
- Salt and pepper to taste
Method:
- Sauté the chopped onion in a little olive oil until translucent
- Add the garlic and cook for a couple more minutes
- Add the entire bag of frozen broccoli and cauliflower and cover with just enough water to almost cover the veg (you can always add more later)
- Add the chicken and/or veg stock cubes (I used 1 cube of chicken stock and one veg stock cube)
- Let it boil gently for about 20 mins until soft
- Add the dollop of creme fraiche or soft cheese and the grated parmesan
- Blend until smooth
- Enjoy on it’s own or with some crusty bread.
