The reason why I call these “Italian” green beans is because the Italians tend to cook their veg far longer than we do in South Africa (or England for that matter). When I first saw these green beans I had assumed that they were completely over-cooked but this is exactly how they were intended. They tend to soften and with the addition of some onion, garlic and a couple of tomatoes they are truly delicious.
Ingredients:
- Green Beans (I’ve used frozen beans in this recipe but fresh are just as good)
- 1 sliced garlic clove
- Half a sliced onion
- 2 medium or 1 large tomato
- Salt and pepper to taste
- A dash of white wine or water
- 2 tsp olive oil
Method:
- Put all of the ingredients into a pan which has a lid
- Put the pan on a low heat and cook slowly, stirring occasionally
- If additional water is required add a dash more at a time and close the lid, the steam is cooking the beans
- Once the beans are tender and the tomato has broken down as below they are ready
- Add salt and pepper to taste
