Store cupboard chicken marinade

This is another one of those non-recipe recipes. Too easy. Just a mix, save and cool job. I’ve used ingredients that I tend to always have to hand, in the cupboard or the fridge.

  • 6 – 8 skinless, boneless chicken thighs
  • 1 tsp Dijon mustard
  • 1 tsp wholegrain mustard
  • 1 tbsp tomato ketchup
  • 1 tsp ground black pepper
  • 1 tsp crushed sea salt
  • 1 tbsp Worcestershire sauce
  • 2 tbsp runny honey
  • 1-2 cloves of crushed garlic
  • 1 tbsp of lemon juice (optional)
  • Chopped fresh herbs of your choice (optional), I used thyme

  1. Mix all the ingredients (except the chicken pieces) to form the marinade
  2. Put the marinade in a ziplock style bag or dish and mix with the chicken pieces
  3. Seal and leave for a couple of hours, preferably overnight
  4. Cook for about 10 – 15 minutes on a braai (barbecue) or fry in a pan for the same amount of time or until the juices run clear.
