This is another one of those non-recipe recipes. Too easy. Just a mix, save and cool job. I’ve used ingredients that I tend to always have to hand, in the cupboard or the fridge.
- 6 – 8 skinless, boneless chicken thighs
- 1 tsp Dijon mustard
- 1 tsp wholegrain mustard
- 1 tbsp tomato ketchup
- 1 tsp ground black pepper
- 1 tsp crushed sea salt
- 1 tbsp Worcestershire sauce
- 2 tbsp runny honey
- 1-2 cloves of crushed garlic
- 1 tbsp of lemon juice (optional)
- Chopped fresh herbs of your choice (optional), I used thyme
- Mix all the ingredients (except the chicken pieces) to form the marinade
- Put the marinade in a ziplock style bag or dish and mix with the chicken pieces
- Seal and leave for a couple of hours, preferably overnight
- Cook for about 10 – 15 minutes on a braai (barbecue) or fry in a pan for the same amount of time or until the juices run clear.
