Another one of my favourites. Great on a blini or a cracker and just as good on a slice of toast or a sandwich. This makes quite a lot, I’ve just recently made a batch to use at a new years eve party so you can easily halve the quantities or just make a big batch like this and freeze portions in a plastic container.
- 2 x 250g soft cheese ( I used one that was a garlic and herb flavour but you can have both plain)
- 2 x 120g smoked salmon trimmings (you can use sliced salmon but as you’re going to mash it up anyway you may as well use a cheaper alternative)
- 4 spring onions, finely chopped
- 1 garlic clove, crushed
- Juice of 1 lemon (or more to taste)
- 2 teaspoons of capers in brine
- 1 teaspoon ground black pepper
- 1 teaspoon butter
- Gently sauté the spring onion and garlic in the butter until softened
- Add all the ingredients into a mixer and mix until combined and a relatively smooth consistency
- Taste and add more lemon juice if desired.
